Nice shot Doc. Now, is that a meat dish?

Sury, as Yildiz pointed out, the Lahmacun (Lahm bi'ajin) is with minced meat.

Thanks Doc. My oversight. Does this have eggplant per chance? bi'ajin sounds
phonetically similar to baigan, which is what an eggplant is called in India.

The visit to the vineyard looked like a great day out Sury, everyone seems to have got into the spirit of the whole thing.
The fruits of their labour tasting and sampling section seemed like it was a success as well.
I’m always interested in the way types of pickles are used and produced so that Tursu article was interesting to read, I see some chili might have wended its merry way into some varieties.
Greg
Ps I did take photo of the schnitzel Yildiz but it looks pretty much like the steak and vegies dish the way we do it, the chicken fillets are done in breadcrumbs with some garlic sauce over it and with either string beans or peas (whatever is handy, sometimes it’s snow peas) and of course mashed spuds…gotta have mashed spuds. Because visually there isn’t a huge difference to the other meal I didn’t bother with processing and posting.
Last night it was corned beef fritters, simple fast and very few dishes to wash.

Nice pic Doc and very interesting link!

I always appreciate recipes that minimise the washing up, Greg :)

Thank you for sharing the making shot of the Lahmacun, Dr. Harout. :)

Enduring the heat while the baking is in progress...

Sury, no eggplants are involved in the making of the Lahmacun. lahm bi'ajīn, means meat with dough. The name originates from Arabic, 'lahm' meaning meat and macun or biajin meaning dough. (I checked with the Wikipedia)

Greg, very nice. : ) Reminds me of many dishes we have in Turkish cuisine as well. I might share a couple later.

Thanks for sharing,

Yildiz

Yildiz, thank you. The closest I came to a Turkish dish was a dish called Nohut Dürüm.
Couple of years ago I made the dish at a Thanksgiving party. That was a big hit and
everyone thought that was a very delightful variant to Hummus.

Superb shots of chef Dominique Macquet and his cuisine Pako.

Ditto for the baker Doc.

I would also pass on the wine Sury. Looks like a fun day, very well captured.

Good down home cooking Greg. Got to love those mashed spuds, I sure do. Been eating lots of the new potato nuggets lately, they are only around for a couple of months. Making the most of them. ;^)

Thanks DA I haven't run across those nuggets yet, we buy the frozen chips, there is one brand here that does a pretty good potato chip and only need to be baked in the oven for a while to finish them off, they go well with a couple of meals, instead of going to the trouble of making mashed potato sometimes.

That looks delicious Greg! Anything with egg and pastry is a good thing in my book. (There used to be a common saying here that real men didn't eat Quiche. I never subscribed to this view :) .)
